We’re getting real good at this BBQ thing. Even if we forget we have coals and get half way out of the driveway to go buy some more before we notice a bag and a half sitting in the garage next to the car.
Yesterday Brett got the coals started and then came in to mix up our Mexican style hamburgers from Better Homes and Garden’s cookbook (main difference between these and regular burgers is you use salsa instead of milk when mixing them).
While he was doing that I put together some jalapeño & bacon poppers and got them in the oven (half a jalapeño filled with cream cheese, wrapped in bacon, and cooked on low in the oven).
Then I put together some potato foil packets (diced potatoes with small pieces of bacon and garlic) and corn on the cob packets (husked corn, small slabs of butter, and garlic powder).
We put the foil packets in the coals before adding the burgers, flipped them for the second set of burgers, and then enjoyed the yumminess.
We topped the hamburgers with cheese, tomatoes, avocado, and lettuce.
No doubt about it, we eat well when we bbq.
